Troupis wanted to make a traditional style of Moschofilero--wild fermented, light skin contact, unfined, unfiltered (but no oak). The result is a lightly pink wine that tastes like a Greek meadow: wildflower pollen, light honey, light peach. It has very slight tannin, medium body, great acidity. Sip it on its own, or try it with falafel, summer tomato salad.
