Blanc de noir from organically farmed Xinomavro grapes, fermented by its native yeast with some temperature control in stainless steel, free run, and raised for another 5 months in stainless before bottled unfiltered, unfined, unsulfured. It went through full malolactic in the bottle.
Giving you a cloudy pale yellow in color with subtle effervescence, spicy aromas and an electric and tactile mouth sensation.
